Pretzel Chocolate Chip Cookie Bars

Makes 16 bars

Ingredients:

1 cup (2 sticks) of unsalted butter, melted

1 cup of packed light brown sugar

½ cup of sugar

2 large eggs

1 ½ teaspoons of vanilla extract

2 cups of all-purpose flour

1 teaspoon of salt

1 ½ cups of chocolate chips, divided

1 cup of salted pretzels, crushed and divided

2 teaspoons vegetable oil

 

Directions:

Preheat oven to 350 degrees.

 

Line an 8-inch square baking pan with parchment paper coated with cooking spray.

 

In a mixer with whisk attachment, whisk together melted butter, sugar, and light brown sugar until well blended. Add the eggs and vanilla. Whisk until combined.

 

Remove bowl from mixer and stir in flour and salt with a spatula. Stir in 1 cup of the chocolate chips and ½ cup of the crushed pretzels.

 

Pour batter into prepared pan, smoothing out the top. Sprinkle the remaining crushed pretzels, pressing lightly into the batter.

 

Bake for 30 minutes or until toothpick comes out clean.

 

While they bake, melt the remaining chocolate chips with the vegetable oil in the microwave, making sure not to burn the mixture.

 

Remove cookie bars from oven and allow to cool completely in the pan. After the cooling process, remove the bars with parchment paper from the pan. Drizzle the bars with melted chocolate and let the chocolate harden.

 

Cut the cookie bars into 16 squares and serve. Enjoy!
